Navutu Dreams Culinary Team at the CAMFOOD’16

Navutu Dreams Resort and Wellness Retreat has been chosen to compete in the Cambodia Hospitality Competitions 2016 organized by CAMFOOD/HOTEL’16. It will be Cambodia’s biggest international HORECA and food & drinks exhibition which will be held at the Diamond Island Exhibition Centre, Koh Pich in Cambodia’s Capital, Phnom Penh.

On the 22nd October, Navutu Dreams Culinary Team will battle it out against other culinary teams from across the country in front of a live audience and culinary judges. This is not the first time for Navutu Dreams to join this prestigious competition as last year, the Navutu Dreams Culinary Team won silver. The team headed by our Executive Chef Bunchhou, is very optimistic that they will be able to bring home the gold medal this year.

Before the kitchen cook-off takes place this week, we sat down with Chef Luy who is our entry for the competition. Chef Luy Loan hails from Pouk District in Siem Reap and has been a chef for about 5 years. He joined Navutu Dreams in March 2014 and has been working as a Demi Chef. Chef Luy has the control over the kitchen and is responsible for the food quality produced in the afternoon shift. Prior to being a chef, according to Chef Luy, he started as a housekeeping staff. His culinary career started when a head chef at a 5 star hotel in Siem Reap where he used to work for saw his potential and offered him a chance to undergo training. Within three months, he built up his culinary skill, confidence and got by it easily. Continually improving his technique and skills by gaining work experiences and learning from his colleagues, Luy today is now a certified chef.

When you are passionate about what you do, you will keep on learning and improving yourself.

Chef Luy with the supervision of our Executive Chef Bunchhou will be competing under the ‘Cambodian Cuisine’ category. Three other hotels/restaurants from Siem Reap as well as as 5 star hotels and restaurants from Phnom Penh and Sihanoukville will keep pace to win the championship in the category. Three hours will be given to each team to showcase their cooking techniques and prepare their secret recipes.

Q: What are you preparing for the Cambodia Hospitality Competitions 2016?

A: “We are preparing a 4-course menu. We have Green Mango Salad with Smoked Fish, Cornish Game Hen Chicken Curry (Khmer Style), Sour Mixed Ingredients with June Plum Leaves with Pork and Traditional Khmer Sticky Rice Cake with Coconut Filling.  (Chef Bunchhou)

Q: How do you prepare yourselves for the culinary competition?

A: “We have been doing some food tasting and have tried different food platings for the past few weeks. Our aim is to really improve the taste and the food presentation before the kitchen cook-off. (Chef Luy)

Q: What do you think will make you bag the championship?

A: “We have secret recipes which are truly unique. We will be preparing traditional Khmer dishes with modern interpretation. The taste, the presentation and the cooking techniques are our priority. We are really eager to win this competition. (Chef Bunchhou). We must do our BEST. (Chef Luy).
